Gingerbread is a traditional German baked good that has been baked for centuries for Christmas. There are countless recipes and interpretations about how the perfect gingerbread should be. I like it most traditional, just as my grandmother always baked it: a soft core, with delicious honey, warm spices and a crisp chocolate coating.

Gingerbread is definitely my favorite Christmas treat! All flavors of the spices and the delicious honey combine so perfectly and the taste reminds one of a cozy and contemplative Christmas Eve with the family. A bite of this delicious gingerbread will definitely put you in the Christmas spirit and you'll want to decorate the tree and get the Christmas music going.

Many of you know that we manufacture our cosmetics in Southern Germany in our own production and that I am originally from there. Every year I was very curious about when the gingerbread will finally be available in the store in the autumn (nowadays it feels like this every year).

Most of all, my anticipation was huge when my grandmother baked her gingerbread (according to her traditional German recipe) just before Christmas and the whole house smelled of delicious Christmas gingerbread.

You can find many different gingerbread recipes on the internet. Some for the Nuremberg gingerbread, which are made without flour, but with nuts. Other gingerbreads are made from a stiff dough that is rolled and baked. My favorites are those soft gingerbreads, traditionally in the form of stars, hearts and pretzels that I would like to show you in this recipe. After baking the cookies, I prefer to cover them with chocolate, but you can also take a rum-sugar icing or eat them right away.

These cookies can be kept in a jar with glaze for up to 10 days (but they never make it that far away from home because we've eaten them before) or you can pack and freeze them to keep them fresh longer.

Homemade gingerbread

Ingredients:

(results in about 12 gingerbread in the form of stars, hearts and pretzels)

250 g flour
125 g sugar
1.5 tbsp cocoa powder (without sugar!)
1.5 EL gingerbread spice
8 g baking powder
150 ml of milk
2 EL oil
125 g honey

Upon need.
Chocolate for glazing
Frosting or further decoration

Preheat the oven to 170 ° C (convection).

Mix flour, cocoa, baking powder and the gingerbread spice in a large bowl.

In another bowl, mix milk, oil and the honey. Slowly add the liquid ingredients to the dry ingredients while stirring and stir until well blended.

I use special gingerbread molds made of silicone, but you can also use any baking pan you have at home. Just remember that the baking time could change as the size of the shape changes.

You probably do not need to wet the silicone molds with oil, but I still do it to make sure that I get the gingerbread out of shape properly.

Do not fill the shape to the very edge, as they will rise slightly in the oven and bake the gingerbread for about 35 minutes.

Allow the gingerbread to cool for about 5 minutes before removing it from the mold. Glaze with chocolate or frosting.
